Soluble in oil and a variety of organic solvents, insoluble in cold water, can be dispersed in hot water. Used in food as emulsifier; Also functions as greasy emulsifier in cosmetics, coating, textile industry.

Sorbitan monolaurate is synthesized by direct reaction of sorbitol with lauric acid, a very famous nonionic surfactant which possesses many excellent properties, such as emulsifying, dispersing and being nontoxic, nonirritant and low-volatile.
